The kiwi heavyweight will fight Mexican-American Alexander Flores on December 15 in Christchurch.
Flores has a 17-1 record, 15 of which have been by knockout.
It'll be Parker's first fight since suffering consecutive losses Anthony Joshua and Dillian Whyte.
Parker's promoter David Higgins says they couldn't put up someone really poor as the fight wouldn't take off.
But at the same time he says they couldn't bring a current title contender over as it's too expensive.
He says they have to balance that by fighting someone who could be a bit tricky for Parker and they have the balance right.
