The 27-year-old takes over from Les Elder for next month's Pacific Four Series against Australia, Canada and the US.
Demant, who has suffered three serious knee injuries, says she never expected to be in this position.
They only played each other 12 months ago in test cricket but Black Caps coach Gary Stead's expecting a different England side under new captain Ben Stokes.
Next month's three test series is Christchurch-born Stokes' first chance at the helm of the England test team since formally taking over from Joe Root.
